  • Add fresh blueberries, adding these berries will give your flapjack an added bit of freshness and colour. If you have frozen blueberries that can work too, just make sure you fully thaw and drain them of any extra water.
  • Add chocolate chips, adding chocolate chips will make the pancakes EXTRA indulgent. (adding sweetened chocolate to your recipe could make the pancakes way to sweet so make sure you reduce the sugar amount when adding chocolate.

  • honey butter, on cold rainy and cloudy days honey butter is my go too. There’s just something about melting butter on hot scotch pancakes. You can make the honey butter by mixing 1 tablespoon of butter in 1 teaspoon of honey. Use this as a spread for your pancakes.
  • Ice-cream, on hot days vanilla ice cream is my go to. Just place two scoops of ice-cream per pancake and you should be good.

Ingredients
  

  • 1 cup self raising flour
  • 1/3 cup white sugar
  • pinch of salt
  • 1 tsp baking powder
  • 2 large eggs
  • 1 tbsp vanilla essence
  • ¾ cup buttermilk
  • 1 tbsp sunflower oil for frying

Instructions
 

  •  Sift  all the dry ingredients into a large mixing bowl and stir until everything is evenly distributed.
  • Whisk all the wet ingredients into a medium bowl until everything is combined.
  • Pour the wet ingredients into the dry ingredients and mix well until there is no flour lumps in your batter
  • In a large cooking pan heat 1 tbsp of oil on medium low heat
  • 1.    Take a 1/8 cup of batter and fry in your pan. Once the oneside has bubbles in the middle of the batter and the bottom is golden brownflip the pancake and cook on the other side for 2 minutes or until the bottomis also golden brown and cooked. ( Make sure you keep adding a little bit ofoil into your pan after each pancake to ensure that non of them burn or stickto the pan.)
