- 4 whole beetroot washed
- 1 cup water
Vinaigrette Dressing
- 1 tablespoon honey
- 2 tablespoons vinegar
- pinch salt
- 2 teaspoons vegetable oil
Peel and chop the beetroot into small cubes.
Place the vegetable into a medium-sized pot along with the water, and boil the beetroot for 25 minutes.
In the meantime make the vinaigrette dressing by whisking the vinegar, vegetable oil, sugar, and salt. Set aside once done.
Once the beetroot is tender, drain all the excess water and place it into a serving dish. Drizzle the vinaigrette dressing over the tender beetroot and mix well.
Refrigerate the beetroot for an hour and serve cool with your other favorite sides.
