Ingredients
  

  • enough butter for frying

Ingredients for the strawberry jam

  • 200 grams sliced strawberries
  • cup brown sugar

ingredients for the pancakes

  • 1 cup self-raising flour
  • pinch of salt
  • 1 teaspoon baking powder
  • 2 large eggs
  • ¾ cups yogurt
  • 1 tablespoon vanilla essence

for the whipped fresh cream topping

  • 1 cup fresh cream
  • cup powdered sugar

Instructions

  • Mix the sliced strawberries and brown sugar into a small bowl and set it aside to form the very quick jam.

Make the pancake batter

  • Mix all the dry ingredients into a large bowl.
  • Whisk all the wet ingredients in a medium bowl.
  • Now add the wet ingredients to the dry ingredients, and mix well to ensure there are no lumps in the batter.
  • Fold the strawberry jam into your batter until it is well combined.

  • Place a large skillet on medium-low heat and add a teaspoon of butter.
  • Once the butter has melted add ⅛ cup of batter onto the skillet, you should be able to cook three at a time. Flip the pancake once the top starts to bubble,
  • Cook for a further minute on the other side and set aside.
  • Do this for the remainder of the batter.

Make the whipped fresh cream

  • In a very narrow cup or bowl add the fresh cream and powdered sugar and whisk well, use an electric whisk for faster results. Do not overmix, this will curdle the cream and turn it into butter.
  • Once you are done set the cream aside.

assemble

  • Serve the pancakes with fresh cream and a generous amount of sliced fresh strawberries.
